The Langham, Custom House, Bangkok has unveiled the culinary and cocktail talent behind its new food and beverage programme, ahead of the luxury hotel’s opening in December 2026.
Set within Bangkok’s restored 1888 Custom House and adjacent heritage buildings on the Chao Phraya River, the programme will bring together acclaimed chefs and bartending specialists across four dining and drinking venues.
Roi Chak Sam, a contemporary Thai restaurant, will be led by Chef Thitid “Ton” Tassanakajohn, whose Le Du was named No. 1 on Asia’s 50 Best Restaurants 2023. Inspired by the Glorious Era of Siam, the restaurant will combine seasonal Thai produce with contemporary techniques.
At The Cotton Room, two-MICHELIN-starred Chef Garima Arora, Chef-Owner of Gaa in Bangkok, will create a new Indian dining concept combining Indian culinary traditions with Thai ingredients. The venue will also offer breakfast and The Langham’s signature Afternoon Tea, led by Executive Pastry Chef Prot Stitpittayayut.
T’ang Court will bring The Langham’s celebrated Cantonese dining experience to Bangkok for the first time. Led by Executive Chinese Chef Ricky Lin Quoping, who draws on his experience at the three-MICHELIN-starred original at The Langham, Hong Kong, it will serve Cantonese barbecue, dim sum, premium seafood and wok-fired dishes.
Meanwhile, Crowntail will be a multi-zone cocktail bar overlooking the Chao Phraya River, led by Bar Manager Tom Hearn, whose experience includes Vesper in Bangkok and KOL Mezcaleria and The American Bar at The Savoy in London.
The wider culinary programme will be overseen by Executive Chef Phukvarun “Golf” Watchmon, who brings more than 15 years of experience across Bangkok’s leading kitchens.
Together, the venues will establish the restored Custom House as a new social destination on the Chao Phraya River, bringing together locals and visitors through food, cocktails and hospitality.
