Velaa Private Island’s award-winning, overwater fine-dining signature restaurant, Aragu, will be the backdrop for Gastronomy Month, running throughout November. The programme opens with Chef Mark Lundgaard, Head Chef and Director of the two-Michelin-starred Kong Hans Kælder in Copenhagen, from 6 to 8 November.
Working from one of the city's oldest buildings, Lundgaard has shaped a culinary style that honours heritage while embracing modern precision, reinterpreting classical French technique through a refined Nordic perspective. He will join Aragu's Chef Gaushan de Silva for two exclusive four-hands dinners.
On 18 November, Velaa welcomes Champagne Billecart-Salmon for an intimate evening at Aragu Signature Restaurant, hosted by Managing Director Alexandre Bader, a member of the Billecart-Salmon family since 1992 who has helped define the House's modern international identity, and Asia-Pacific Director Sébastien Papin, who leads exclusive tastings and dining experiences with luxury hotels and Michelin-starred restaurants across the region. The evening brings together the House's exceptional Champagnes with a specially crafted menu and each pairing thoughtfully presented throughout.
Gastronomy Month closes from 25 to 27 November with Michelin-starred Chef Olivier Limousin, whose 25-year career spans some of the most celebrated kitchens in Paris, London and Bangkok, including working alongside the legendary Joël Robuchon. Limousin's style is grounded in classical French technique, seasonal ingredients and contemporary precision. He too will join Chef Gaushan de Silva at Aragu for two exclusive four-hands dinners, presenting a tailored menu celebrating refined technique, global influences and the artistry of exceptional dining.
