Hendry replaces Martin Johnson who was elected chair of the organisation at the Lata Expo last month.
Voted for by the Lata committee, Danny Callaghan, chief executive of Lata, said: "The Lata committee’s decision to appoint Carmel as vice chair, off the back of Martin Johnson taking the chair, is great.
"We have a fantastic team in place to drive Lata forward in the coming years. We have some exciting plans, so keep an eye out."
Hendry has been product manager at Explore for nearly eight years and on the Lata committee since 2019.
She said: "I’m delighted to be appointed to the role of vice-chair of Lata. I look forward to working collaboratively with Martin and the Lata committee to serve our membership and advance the interests of Latin American tourism; an industry that’s very close to my heart."
