When you picture a Majorca hotel, a 16th century farmhouse is unlikely to pop into your head.
Located by the rural town of Sa Pobla, Son Sabater by Zafiro has been offering an alternative to the Balearic island’s glitzy resorts since its May 2024 opening.
And by alternative, we mean – it’s the complete opposite.
The estate is legally registered as an ‘agrotourism’ destination – a working farm with a massive organic vegetable patch, 1500 ancient olive trees and four hectares of Holm Oak forest.
At the heart of this plot is the hotel, a 15-room mansion that feels straight out of a Spanish fairytale: picture gold-hued sandstone, Arabian tiled roofs and sage green window shutters.
There is no grand reception area; instead, an intimate lobby of exposed masonry walls and modular, cream furniture greets guests on arrival.
Clients are seated for check-in, before being offered a choice of herbal tea or Cava and a full overview of the property and its nearby attractions. The process is informal, relaxed and – bar the friendly chat with staff – pindrop silent. It’s official: we’re light years away from Majorca’s touristy southern coast.
Rooms at Son Sabater by Zafiro
Guests of Son Sabater by Zafiro have two choices of accommodation: one of the 12 rooms in the historic main building or one of three freestanding villas.
The hotel categories include Double Deluxe Rooms, most of which are located on the first floor and boast views of Sierra de Tramuntana, Junior Suites, which are slightly larger and offer a dedicated seating area, and One Bedroom Suites, which offer private balconies and a separate lounge.
All rooms have a neutral, minimalistic design, allowing the building’s original features – many of which have been restored during its 2023 refurbishment – to take centre stage.
Expect veteran structures of timber beams, stone pillars and rocky walls, all softened by linen blinds, woven chairs and warm lighting.
Son Sabater’s trio of Mediterranean-style villas are likely more suitable for high-net-worth guests, however, all of which promise the soundproof peace and ample space expected by today’s discerning clients. For maximum privacy, request the One Bedroom Suite Villa with a Private Terrace. This rustic abode comes with its own pergola, where clients can relax on a Bali bed or enjoy al-fresco dining without being disturbed by their fellow guests. (It’s also an idyllic spot for stargazing – just be sure to take a coat).
Dining at Son Sabater by Zafiro
It should come as no surprise that Son Sabater’s restaurant, headed by Majorca native Lluis Cardell, is heavily influenced by its agrotourism status.
Many of the menu’s most popular recipes, including the Trampo, the Tumbet, and the Lobster Rice, use ingredients grown right on the farm, while its Arbequina and Picual olive oils come directly from the estate’s olive grove.
Guests can also expect a number of vegan dishes, such as Zafiro’s famous plant-based cannelloni, as well as red berry salads and fruit sorbets. The baked goods at breakfast are another highlight; Cardell’s title as a Master of Pastry shines in everything from his sourdough bread to his savoury ensaimadas.
Wellness at Son Sabater by Zafiro
For a hotel of its size, Son Sabater’s wellness arm packs a strong punch.
Just a few steps from the main house, you’ll find a spa with a 14-metre-long lap pool, Finnish sauna, Turkish bath and fitness studio, as well as a treatment cabin where guests can enjoy everything from mud wraps to quartz stone therapy.
Outside, there is a spacious deck with floating daybeds, a 13-metre-long pool and a freestanding pillar shower for rinsing off. Though unheated, the pool’s saltwater is pleasantly warmed by the Majorca sun (which can exceed 40°C in summer). It also includes Roman steps for easier access, as well as jets for that all-important water massage.
